Chick and Rice Casserole

Skinless/Boneless Chicken Meat
Precooked/frozen or raw
White or dark meat and quantity to please yourself
Minute Rice (6 cups min)
Any brand 26 oz size cans of soup
2 - Cream of Chicken
1 - Cream of Mushroom
1 - Chicken Broth

Directions

Use your largest pot or a soup pot with a lid. Empty all soup cans into 1 pot; stir
over low heat until thoroughly combined. Allow soup to simmer. Cut chicken into
bite size chunks using whatever amount suits your tastes. Throw chicken in the pot
with the soup and length of cooking time will depend on whether chicken is raw,
pre-cooked or frozen. Add Minute Rice one cup at a time while stirring mixture. When
it appears to take on the thickness of a hearty stew, you have enough rice. Keep in mind
the rice will absorb the soup instead of "water" like the original instructions on the box.
Remove pot from stove and let stand for about 20 minutes. Makes enough to feed an
army, but don't be surprised if you haven't made enough.

Macaroni Casserole

1 - ½ pound Ground Beef
1 Can Tomatoes
1 sm. Box Macaroni
1 medium Onion
1 pkg American Cheese

Cook together beef and onion. Add tomatoes and cook. Stir in
Pre-cook Macaroni. Put in a casserole dish half of your mixture.
Place cheese over the mixture. Put the rest of your mixture over
the cheese. Then top that layer with cheese. Bake at 350 degrees
for 30 minutes.

Squash Casserole

½ Stick of Butter
4 Cups of pre-cooked Squash
½ medium Onion diced
Paprika
Salt & Pepper
1 bag 4 oz. Pre-Shredded Cheese

Mix all of the ingredients together in a greased pan. Add the
Shredded cheese on the top. Sprinkle paprika on the top.
Bake in an over at 400 degrees for 20 minutes.

Yam Casserole

3 Cups Mashed Sweet Potatoes
2 tbsp Melted Butter
½ cup Crushed Pineapple
½ tsp. Salt
¼ cup Pineapple Juice

Topping

1 tbsp Butter
1 Cup Sm. Marshmellows

Beat together, until light and fluffy potatoes. Add butter,
Salt and Pineapple Juice. Pour into greased 1 quart Casserole.
Dot with butter and top with marshmallows. Bake in a preheated
Oven at 350 degrees for 30 minutes uncovered

Broccoli Casserole

I Large Pkg frozen Broccoli Pre-cooked
1 Can Cream of Mushroom or Chicken Soup
1 Large Pkg Shredded Cheese
1 Large Can French Fried Onions
Salt and Pepper

Place Broccoli in casserole. Add soup (either Cream of Mushroom
or Cream of Chicken is good. Then add Shredded Cheese. Top
with French Fried Onion and bake in 350 degree oven
about 25 or 30 minutes.

Jersey Bean Crock

1/4 lb large harricots (white beans)
1/4 lb small harricots (white beans)
1/4 lb butter beans
1/4 lb broad beans
1 pigs trotter (pigs feet)
Strip of pork back fat

 
Soak beans overnight.  Put in a pig's trotter and a strip of pork back fat,
the beans, salt and pepper into an earthenware crock, cover well with 
cold water. Put on the lid and cook in a slow oven for 7 to 8 hours, I like
to add oxo cubes (gravy type cubes) as well.
